Fried beef liver with potatoes and cauliflower topped with blue cheese sauce (*)


Portions for 1 person:

1 slice of beef liver

2 slices of bacon

1 potato

8oz cauliflower


3oz heavy cream

1/2 oz blue cheese

Cut the potato in 1" cubes and cook 5mn in a steamer. Then add the cauliflower cut in small pieces. Cook for another 15mn.

Meanwhile, heat a pan at low heat to fry the pieces of bacon. When they are cooked, place them on a paper napkin to drain off the fat. Fry liver on medium heat for about 3mn each side if liver is less than 1/2" thick.

While the liver is cooking, put the cream and the blue cheese in a small pan and stir with a wooden spoon to blend the sauce.

Very good recipe!!! The blue sauce goes very well with liver. To try with other offals (heart, kidney, brains, etc...)
